Carrot Cake Keto Bites

On my quest for keto sweet-ish snacky things, I’ve discovered that I like the fat balls maybe a little too much. So, I decided I should make some veggie-based bites to mix it up a bit. Still keto, using low-carb zucchini and just a 1/4 carrots (which are still fine on the keto diet, but a little more on the starchy side). What gives these the carrot cake-like flavor are the spices. Even a more rich orange color can be achieved by adding the turmeric! I actually ended up liking these even more than the more fatty snack balls, so maybe you’ll want to double or triple the recipe when you make them πŸ˜‰ Feel free to play around with the recipe – all that really matters is that they form a ball in the end and that you enjoy the flavor!

INGREDIENTS

  • 1/4 c chopped carrots
  • 3/4 c chopped zucchini
  • 1/4 c coconut butter
  • 1 tbsp coconut oil
  • 1/2 c pecans
  • 1/2 c walnuts
  • 1 tbsp maca (This is a must!!! The butterscotchy flavor was perrrfect for this recipe)
  • 1 tsp nutmeg
  • 2 tsp cinnamon
  • 1 tsp cardamom
  • 1 tsp turmeric
  • pinch sea salt
  • 1 tbsp maple syrup (or not, doesn’t really need it)
  • unsweetened coconut

Pulse the veggies in a food processor first; put those aside and add the nuts and maca to the food processor and pulse a few times (to your desired consistency). Add all ingredients in and mix until combined. Roll into balls, put some coconut on them, store in the fridge! So easy. SO GOOD
