So many good things you can load into dressings with a high-speed blender. Have a picky child/man? This is a genius way to pack in the nutrients under the guise of a delicious dressing. I find that as long as a dressing has a nice balance of acid, sweet, and fat (i.e. lemon, honey, olive oil), with a flavor pop like your favorite herb or garlic, you really can’t go wrong! I urge you to experiment with different combinations.
Just so you know:
To make a dressing creamier….
Add: Avocado, Greek yogurt, or egg yolk
To make a dressing sweeter….
Add: Honey, maple syrup, stevia, or a small chunk of banana
Always add adequate amounts of salt and pepper, and in my opinion: a small cloves of garlic is always a great idea.

- 2 c chopped basil
- 1/2 c chopped parsley
- 2 green onions
- 2 c wild arugula
- 1/3 medium avocado
- 2 cloves garlic
- 1/3 c lemon juice
- 1/4 c extra virgin olive oil
- 1/4 c apple cider vinegar
- 1/4 c water
- Sea salt & fresh cracked pepper to taste
Add all ingredients to high speed blender and blend until smooth and creamy!
